if only 8-12 beds 600 amp is fine and you probably got a 200 amp panel with 220 volts coming in when you upgrade to a 600 amp 3 phase you more than likely will have 208 coming in and will need buck boosters.

It will cost you probably 20-25,0000 for the whole store to be wired.
