What is a good insurance company? What is a good liability $$ amount? Any help with this subject would be great.

I cannot tell you how much coverage to get. That is really a personal decision and will be affected by factors personal to your salon.

Yes, it is impossible to tell someone how much they need. Many factors fall into play here -- your landlord (if you have one) is sure to have many mandatory amounts that you must carry.
