I have a employee handbook. I have learned through the years of management, its easy for your employees to find a crack to squeeze through. So when they are hired they get this book,(really just a few Pgs) and they have to sign a form saying they know what is expected of them and they have to sign a form stating they read and understand the book. This way they know what is expected of them.

To avoid any mischief in any business, you should have your rules in writing. As a owner and a background in management, for legal reasons you should put what you expect out of your employees in writing. With this said, when you do this, you keep your business from lawsuits down the road.
